Who doesn't like a good pizza? And what if I told you you could eat pizza every week. Yes :) I've got an easy way to eat make a healthy yet tasty pizza bite.
It's the perfect snack when having friends over or a side dish to make your salad a little gourmet.

Ingredients:
1 medium eggplant
1 cup of cheese - cheddar, mozzarella or vegan cheese
1/2 cup of tomato/pizza sauce
2 tb of grated parmesan
4 garlic cloves crushed
olive oil
salt
pepper
few fresh leaves of basil or, 2 tb of dried basil or Italian herbs
Optional: vegetables diced into small pieces
What you will need:
- Oven
- Baking paper
Method:
1. Slice eggplant into 1-1.5 cm thick slices (see picture on the right).
2. This step is optional. Add some salt on each and leave them to "sweat" for app. 30 minutes. Then using some paper, wipe the slices off.
3. In the meantime, preheat the oven on 175 C.

4. Line a baking tray with the slices. Coat the slices with some olive oil and then place in the oven for about 15 minutes.

5. Mix the tomato sauce, herbs and garlic. Adjust taste with salt and pepper.
- You can also choose to add vegetables to the sauce like diced peppers, eggplants, zucchinis, mushrooms, olives or fresh tomatoes.

6. Remove baking tray from the oven, pour sauce onto each slice evenly.
7. Mix cheese and add it on top of the slices.
8. Bake for another 2 to 3 minutes or until the cheese melt.
9. Let the pizza bites cool for a few minutes, and enjoy!

Tips and nutrition information:
You can use zucchini as the pizza base if you don't like eggplants.
Using a vegetable as the pizza base makes it higher in fibre and lower in calories.
Eggplant is high in vitamins and minerals, making it an excellent source of antioxidants (anti-inflammatory compounds). It's a good idea to include more eggplants and vegetables in your diet to protect your health!
