These chocolate bites are the perfect fix when you want something sweet for dessert or you're having a sweet craving. They are full of nutrients that will leave you feeling satisfied for long.
Ingredients:
14 dates, pits removed
2 tablespoons of raw cacao powder
100g of dark chocolate - 70% or more
2-3 tablespoon of coconut cream or regular cream
1/4 teaspoon of vanilla extract powder
pinch of salt
1/2 cup of crushed peanuts or hazelnuts
Optional: seeds, honey, maple syrup
Method:
Soak dates for 10 minutes in lukewarm water.
In the men time melt chocolate. You can use one of these 3 methods.
Drain water from the dates.
Place all ingredients except the nuts in your mixer, and blend.
You should aim to have a paste like consistency. Adjust by adding more water/liquid if the mixture is too thick or a little cacao if it is too runny.
Make small bite size balls.
In a plate, place the crushed nuts. Roll the balls into the crushed nuts to cover evenly the bites.
Place in the refrigerator for about 1-2 hours. Enjoy now :) or keep it in the fridge for later.
Notes:
The bites can be kept in the freezer for up to 3 weeks.
If you want to make your chocolate bites more nutritious, you can add in some chia seeds and/or grounded flaxseeds or sunflower seeds - you can add up to 4 tablespoons. Then you may to adjust the consistency by adding more fluid.
If you find the energy bites too bitter, feel free to add some honey or maple syrup for added sweetness.
You can skip the nuts if you are allergic to nuts, and just roll the bites in some cacao powder and enjoy plain chocolate bites :)
